Family Recipe – Soft Pretzels


My sister-in-law recently showed me how to make these delicious treats for my Hubby. It is a crowd pleaser and easier to make than you think!


  1. 1 1/2 cup Water / 8 cups Water
  2. 1 tbsp Sugar
  3. 1 1/2 tsp salt
  4. 1 Packet Yeast
  5. 2 tbsp Butter
  6. 4 1/2 cups Flour
  7. 1/3 cup Baking Soda
  8. 1 tbsp Shortening
  9. 1 Egg
  10. Coarse Kosher Salt


  • Dissolve sugar and salt in warm water (110 degrees) and then add the yeast.  Let sit for 5 minutes or until it foams
  • Melt butter
  • Put yeast mixture in mixer and attach the dough hook
  • Add 2 cups of flour and start the dough hook on low
  • Add melted butter and mix until incorporated
  • Add 2 cups of flour and mix until incorporated
  • Add remaining 1/2 cup of flour and knead in the mixer for 10 minutes
  • In large glass bowl, coat the sides and bottom with the shortening
  • Knead the dough into a ball and put in the glass bowl coating the dough with the shortening from the sides and bottom of the bowl
  • Cover the bowl with plastic wrap, put in the microwave and let the dough double in size (about an hour)
  • Cut the raised dough in half, then each half in 6 even pieces
  • On floured surface, roll the dough into logs 18″ in length
  • Form the pretzel shape with each of the 12 logs – sorry for my crappy illustration 🙂Capture
  • Pinch the legs of the pretzel into the dough below it
  • Put 8 cups of water in large stock pot, add baking soda and bring to a low boil on medium heat
  • Once the baking soda in dissolved, gently place each pretzel into the boiling water for 1 minute each – only do two at a time
  • Place the pretzels on 2 large baking sheets (if you wish line the baking sheets with parchment paper) – 6 on each
  • Whip the egg in a small bowl and coat the pretzels with the egg wash
  • Liberally shake Kosher salt on each pretzel
  • Bake at 450 degrees for 10 minutes
