Nanna’s Bread

This simple but delicious Italian bread is a crowd pleaser! From our family to yours!


  • 3 1/2 cups Bread Flour
  • 1 1/2 cup 110 degree Water
  • 1 packet Yeast
  • 1 tsp Sugar
  • 2 tsp Salt
  • 2 tsp olive oil


Add yeast and sugar to the water and let sit for 5 minutes until foaming. Put the bread flour and salt in the mixer with the dough hook attachment and add the yeast mix. Mix on low for 7 minutes or until dough looks smooth (no strings). Place dough in a large glass bowl greased with the olive oil, cover with saranwrap and let it rise for 2 hours. Turn out the dough on a lightly floured surface and knead a few times with your hands. Cut the dough in half and shape into 2 loaves (round or oval). Place on a baking sheet, cover and let it rise again for an hour. Score the top of the dough to release steam while cooking. Preheat your oven to 450 degrees. Once preheated spray the oven with water using a spray bottle to create a humid oven. Cook the bread for 10 minutes and spray the oven with water again. Cook for an additional 15 minutes. Allow the bread to cool for 15-20 minutes before cutting.

*Depending on the weather/humidity you may need more flour but never more than 4 cups

*If you want poppy or sesame seeds, sprinkle them on before scoring the bread

*If you are cooking the bread on a stone, preheat it with the oven and rise the dough on parchment paper and then transfer to the oven
