My husband is not a huge pork fan unless it’s deep fried. So, I had to get creative! I found a recipe for Grilled Pork in blackberry sauce in a Better Homes and Garden’s magazine last year and it was a hit! Since I’m not real big on spicy pork, I left out the cumin and red pepper. Much to my surprise my husband loved it! My entire family loved it so much that I decided to share it with you! Here is the recipe from the Better Homes and Garden website.
Grilled Pork in Blackberry Sauce
- Sprinkle all sides of pork with cumin; sprinkle lightly with salt and pepper. Let stand 15 minutes.
- Grill pork on the greased rack of a covered grill over medium heat 23 to 25 minutes or until 145 degrees F, turning occasionally. Remove to a cutting board; let stand 3 minutes before slicing.
- Meanwhile, in a small skillet, combine the preserves, vinegar, Worcestershire, and crushed red pepper. Bring to boiling; boil gently, uncovered, for 2 minutes or until slightly thickened. Serve pork with sauce and sprinkle with green onion.
