One of Hubby’s favorite vegetables is zucchini. I’ve played with a few ways to cook him zucchini and this is one of his favorites.
- 2 Large Zucchini
- 1 Small Onion
- 1/2 Pint of Cherry Tomaotes
- 2 tbsp Minced Garlic
- 3 tbsp Olive Oil
- Salt and Pepper to taste
Slice the zucchini into medium (1/4″ slices). Slice the cherry tomatoes in half. Cut your onion in chunks (1″ pieces). In a large skillet, sautée the garlic in olive oil for 1 minute on medium heat. Add the onion and zucchini and stir flipping the zucchini so both sides brown slightly. Add the cherry tomatoes and cook until they start to shrivel. Add salt and pepper to taste.
