Side Dish #3 – Roasted Red Potatoes

I am all about quick and easy side dishes. I am a meat and potatoes girl and this side dish goes perfectly with steak.

Ingredients:

  • 2 lbs Baby Red Potatoes
  • Olive Oil
  • Garlic Salt
  • Rosemary
  • Pan Spray
  • Sour Cream

Directions:

I like using baby red potatoes because they are easier to cut in small wedges. Pre-heat your oven to 400 degrees. Cut your potatoes in small wedges. Spray a small baking sheet with pan spray and spread out your potatoes. If you are using a non stick baking sheet, you do not need to use pan spray. Drizzle a generous amount of olive oil over all of the potatoes and season with garlic salt and rosemary. Stir to coat the potatoes evenly. Cook for 30-40 minutes or until they start to brown slightly. Serve with a side of sour cream.
