Dijon Split Chicken

I had to face the fact that not everyone likes meat like we do. So for when I have guests who don’t eat beef or pork, this is my go to dish. It has an amazing flavor and so far I’ve had nothing but rave reviews (except Hubby the carnivore of course lol).

Ingredients:

  • 4 lbs Split Chicken Breast
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 3 tbsp Olive Oil
  • 2 tbsp Melted Butter
  • 1 tsp Worcestershire Sauce
  • 2 tbsp Dijon Mustard
  • 1/2 cup Chicken Broth

Directions:

Season the chicken with salt and pepper. Mix together the olive oil, melted butter, Worcestershire sauce and Dijon mustard. Coat the chicken completely with the mixture and let it stand for 20 minutes. Preheat your oven to 375 degrees. Cook the chicken for 30 minutes and remove from the oven and add the chicken broth to the pan. Place the chicken back in the oven for 10 minutes or until it is 165 degrees.
