Looking through all of my Mom’s recipe cards has brought back so many fond memories of Thanksgiving. Her many hours in the kitchen brought laughter and happy silence at the dinner table while the family destroyed her hours of work in less than thirty minutes. She always cooked a fantastic dinner that ended in naps on the couch. One of the favorites my Mom made is sweet potato casserole. It’s so simple but delicious.
- 4 cups Sweet Potatoes, cooked, peeled and mashed
- 3/4 cup Sugar
- 2 Eggs, beaten
- 1 tsp Vanilla Extract
- 1 tsp Lemon Juice
- 1/4 tsp Ground Cinnamon
- 1/4 tsp Ground Nutmeg
- 6 tbsp Butter, melted
Mix all the ingredients together in a large mixing bowl and spoon into a greased 8 X 8 casserole dish.
- 1 cup Brown Sugar
- 1/3 cup Flour
- 2/3 cup Chopped Pecans
- 1/4 cup Butter, room temperature
Directions for topping:
Mix all the ingredients together in a small mixing bowl and sprinkle the crumbled mixture over the casserole with your hands.
Bake at 350 degrees for 30 minutes.
