Chicken Casserole

My Mom made this quick and easy casserole at least once a week. This is the perfect dish for the hustle and bustle December brings. Good for the entire family and you don’t have to stand over it. Instead, spend that time decorating your home or wrapping presents.


  • 1 1/2 cup White Rice, uncooked
  • 1 10 oz can Cream of Chicken
  • 1 package Lipton Onion Soup Mix
  • 1 stick Salted Butter
  • 2 1/2 cups Water
  • 6 Boneless Chicken Thighs, washed


In a small sauce pan, mix together the cream of chicken, Lipton onion mix, water and butter and heat on medium low until the ingredients are incorporated. Pour the uncooked rice in the bottom of a large casserole dish. Lay the chicken on top of the rice and pour the mixture over the chicken and rice, cover with foil and bake at 400 degrees for 1 1/2 hours or until the chicken is 165 degrees.
