Tasty chili made with beef and beans – perfect for dinner on this cold night. This meaty chili recipe will win over the pickiest judges in your crowd! Serve it with a dollop of sour cream and cheddar cheese on top for the perfect chili.
- 2 tbsp Olive Oil
- 1 Onion, chopped
- 1 tbsp Garlic (chopped)
- Salt and Pepper to taste
- 1 1/2 pounds Ground Beef (OR Ground Chicken, Turkey or Pork)
- 2 – 3 tbsp Chili Powder (OR 1 tbsp Ground Cumin, 2 tsp. Ground Coriander, 1 tsp Smoked Paprika)
- Pinch of Ground Cinnamon
- 1 Green Bell Pepper, seeded and chopped
- 2 cups Beef Stock (OR Chicken or Vegetable Stock)
- 2 14 oz cans Crushed Tomatoes (OR Tomato Sauce)
- 2 14 oz cans Kidney Beans, rinsed
In a large dutch oven, heat 2 tbsp olive oil over medium high heat. Add onion and garlic and cook until vegetables soften (5 minutes). Add the meat, toss it in the dutch oven and season with salt and pepper to taste. Cook stirring often using a spoon to break up the ground meat until thoroughly browned. Toss in the spices and stir. Add the veggies and cook until softened stirring often. If the vegetables start to stick, add 1 – 2 tsp olive oil. Pour in the stock and crushed tomatoes and bring to a boil. Reduce heat to medium and cook for about 15 minutes. Make sure you stir frequently! Add the beans and cook for an additional 15 minutes.
This recipe can easily be cooked in a crock pot! Just brown your onion, garlic and beef and throw all the ingredients in the crock pot on high for 4 hours. Just make sure you stir frequently and watch it closely because you may need to add more stock to the pot to prevent it from drying out. I gave different options on the ground meat, spices, stock and tomato sauce so you can use what you have in your home.
