My Hubby is Italian, so we eat a ton of pasta. I’m always looking for new pasta dishes to try on my Hubby. Last week, I found a new pasta recipe in my Mom’s old recipe cards. I don’t remember ever eating these creamy noodles before. If my Mom saved the recipe, it must have been good so I decided to give the recipe a shot. Three of our favorite ingredients, pasta, bacon and peas, are in this dish so it has to be delicious right? Yep! They are delicious and the recipe is easy.
- 8 slices Bacon, cooked and diced
- 1 12oz package No Yolks Extra Broad Noodles, uncooked
- 3 cups Chicken Broth
- 1 cup Half and Half
- 1 cup Onion, diced
- 1 cup Frozen Peas
- 1 cup Grated Parmesan
- Salt and Pepper to taste
Cook the bacon slices in a large skillet until brown and crisp. Dice and place the cooked bacon on a paper towel to drain. Save 2 tbsp of the bacon grease and discard the rest. In the same skillet, cook the onion on medium heat in the bacon grease until brown and tender. Add the broth, half and half, and noodles and bring to a boil. Reduce the heat to low and simmer, covered, for 10-12 minutes or until the noodles are soft. Season with salt and pepper and add the peas, cheese and bacon. Stir to incorporate ingredients and cook until peas are fully cooked (about 4 minutes).
It may not be the traditional Italian pasta dish, but my Hubby loved it! Let me know what you think!
