Prime Rib with Au Jus

If you’re like us, you’re on a budget. Eating out for Valentine’s Day can be extremely expensive. Between the meal and a baby sitter it can cost a couple hundred dollars! So, I always cook one of our favorites for our Valentine’s Day stay at home date…Prime Rib! You’ll be surprised how easy it is and the restaurant quality prime rib result is worth staying in and saving money. Second benefit is prime rib left overs for the next day! 


  • 4-5 pound Standing Rib Roast
  • 3 tbsp Dry Mustard
  • Salt
  • Pepper
  • 2 tsp Worcestershire Sauce
  • 1/2 cup Red Wine
  • 1 cup Beef Broth


Preheat oven to 200 degrees. Rub the entire roast with the dry mustard and generously season with the salt and pepper. Place the roast Rib down in a large roasting pan and cook until a thermometer inserted in the center of the roast reads 135 degrees (medium). This should take 3 1/2 to 4 hours for a 5 pound roast.

Remove the roast from the oven and tent with aluminum foil and let it rest for 30 minutes. While it’s resting, make the Au Jus. For the Au Jus, pour the drippings from the pan into a medium sauce pot and place on the stove on medium heat. Whisk in Worcestershire Sauce and wine, reduce sligtly and add beef broth. Bring to simmer and reduce slightly. 

Preheat oven to 500 degrees, remove the foil tent and place the roast back in the oven for 10 minutes until brown and crisp on the outside. Remove and slice immediately for serving.
