Steak Fajitas

When I was a teenager, my parents and I went Christmas shopping at a local mall every year. We would go to Ruby Tuesday’s and get fajitas for lunch before facing the madness. Not to mention, Mom and I would get Dad a few cocktails so the credit card was easier for him to use. 😂 I haven’t had fajitas in years and figured I would give them a shot. I surprised myself because they were delicious. Easy to make and a healthier option for my husband and I to satisfy the carnivores in us.

Fajita Seasoning Ingredients:

  • 1 tbsp Corn Starch
  • 2 tsp Chili Powder
  • 1 tsp Salt
  • 1 tsp Paprika
  • 1 tsp Sugar
  • 1/2 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Cayenne Pepper
  • 1/4 tsp Cumin

Makes 10 teaspoons 

Fajita Ingredients:

  • 1 lb Top Sirloin Steak, sliced into thin strips
  • 3 tbsp Olive Oil
  • 1 tbsp Lime Juice
  • 1 tsp Garlic, Minced
  • 1 medium Onion, sliced
  • 1 small Green Pepper, sliced
  • 1 small Red Pepper, sliced
  • 8 Fajita Tortillas
  • 1 1/2 tbsp Fajita Seasoning

Directions:

Mix all of the fajita seasonings well in a small bowl. Makes 10 teaspoons. Reserve excess seasoning in a spice jar with a tight fitting lid. 

In a medium bowl, mix together 1 1/2 tbsp fajita seasoning, 2 tbsp olive oil, lime juice and garlic. Add the beef and stir to coat. Cover with plastic wrap and let it sit for 15 minutes. Wrap the tortillas in aluminum foil and put in a 350 degree oven for 5-10 minutes. In a large skillet, heat 1 tbsp olive oil on medium high heat and add the onion and peppers. Cook the vegetables until they are soft (about 4 minutes). Transfer the vegetables to a bowl and set aside. Add the beef to the skillet and cook for about 4 minutes or until the meat is no longer red. Add the vegetables back to the skillet and stir for 2 minutes. Serve with your favorite toppings.
