Side dish #5 – Veggie Sauté

Many of my side dishes and soups have the same vegetables as ingredients, because, at our old house we had a beautiful garden. The only vegetables I bought were onions and occasionally broccoli. It was wonderful having fresh vegetables just outside our back door to pick, clean and cook for dinner. Because I had so many veggies, I started playing around with different ways to make them for my hubby. This is the result of one experiment that my hubby likes. It is a great summer BBQ side dish with a little added flavor. 

Ingredients:

  • 1 medium Yellow Squash, sliced then quartered
  • 1 medium Zucchini, sliced then quartered
  • 1 medium Red Onion, chopped
  • 1 medium Red Pepper, cut in 1 inch pieces
  • 1 medium Tomato, chopped
  • 2 tbsp Olive Oil
  • 2 tbsp Garlic Minced
  • 1 tsp Italian Seasoning
  • 1/4 tsp Salt
  • 1/8 tsp Pepper

Directions:

In a large wok (I prefer the wok) or skillet, heat the olive oil on medium heat and sauté the squash, Zucchini, onion and pepper for 5 minutes. Add the garlic and seasonings and sauté for about 5 minutes or until the veggies are crisp but tender. Add the tomato and sauté until the tomatoes are heated. 

I cannot wait for this year’s garden to produce because we have planted cucumbers, squash, zucchini, beefsteak tomatoes, green and red peppers, jalapeño peppers, banana peppers, cherry tomatoes and Roma tomatoes! There will be tons of experimenting this summer!
