Baked Sweet Potatoes

When you’re trying to stay away from fatty foods and replace them with foods rich in complex carbohydrates, sweet potatoes are the answer! I read an article recently that said sweet potatoes are ranked number one in nutrition of all vegetables. They are packed full of dietary fiber, naturally occurring sugars, complex carbohydrates, protein, vitamins A and C, iron and calcium. This recipe for these delicious orange spuds is sweet and delicious enough to satisfy your craving for dessert! It is a little sinful with the oil, butter and sugar, but totally worth the extra calories.


  • 4 medium Sweet Potatoes
  • 2 tbsp Olive Oil
  • Salt and Pepper, to taste
  • 1 stick Salted Butter, melted
  • 2 tsp Ground Cinnamon
  • 1/4 cup Brown Sugar
  • 1/2 cup Pecans, chopped
  • 1 tsp Vanilla Extract


Preheat your oven to 450 degrees. With a knife, cut 10 slits into the top of each sweet potato 3/4 of the way into the sweet potato (do not cut all the way through the potato). Brush the sweet potatoes with the olive oil and salt and pepper to taste. Place them in a baking dish and bake for 35 minutes or until the sweet potatoes are soft (time will vary with each oven). Remove them from the oven. Mix together the melted butter, cinnamon, brown sugar, chopped pecans and vanilla in a small bowl. Drizzle the mixture over the sweet potatoes with a spoon. Return the sweet potatoes to the oven for 10 minutes.
