Congo Bars

Chocolate chip Congo Bars are delicious. Top them with ice cream and you have heaven on a plate! Give this recipe a shot. But be prepared, they won’t last long!

Ingredients:

  • 2 cups brown sugar
  • 2/3 cup salted butter, softened
  • 3 eggs
  • 2 1/2 cup flour
  • 2 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp. vanilla
  • 2 cups semi-sweet chocolate chips

Directions:

Pre-heat your oven to 325 degrees. In a stand mixer with the paddle attachment mix the butter and sugar. Add in eggs and vanilla and stir until combined. Sift together the baking powder, salt and 1 cup of flour. Add it to the butter mixture and then stir in the rest of the flour. Add the chocolate chips and mix on low. Grease a 13 x 9 pan and lightly dust with flour. Press dough into pan. Bake for 25-35 minutes or until lightly browned. All oven cook times are different. When tested with a toothpick, the dough should be soft in the center. Allow bars to cool before cutting.
