Spicy Veggie Stir Fry

With our garden in full swing, I have gotten creative with our vegetables. If you like spicy, this is the dish for you. It is easy, healthy and flavorful!


  • 1 large Zucchini, 1/4″ slices
  • 1 large Squash, 1/4″ slices
  • 1 small Vidalia Onion, chopped
  • 1 small Red Bell Pepper, chopped
  • 1 small Green Bell Pepper, chopped
  • 8 oz Broccoli Florets
  • 1 large Jalapeno Pepper, sliced and seeded
  • 3 tbsp Olive Oil
  • 1/4 cup Low Sodium Soy Sauce
  • 2 tbsp Garlic, Minced
  • Salt and Pepper to taste
  • 2 cups Cooked White Rice


Cook your white rice according to package directions to yield 2 cups of cooked rice, cover and put aside. I prefer Jasmine Rice but any white rice is fine.

Heat the olive oil in a wok on medium heat and add the garlic and vegetables. Cook stirring frequently for 10-15 minutes. Add the soy sauce and salt and pepper, stirring frequently, and cook until the soy sauce slightly thickens, about 5 minutes. Serve on top of the rice and voila! Spicy Veggie Stir Fry for two!

If you want it really flavorful and spicy, add a cayenne pepper! Personally it was too spicy for me but my husband likes it with both peppers including the seeds. Yikes! The veggies are delicious without the rice as well if you are watching your carbs.
